Money on Monday: Soup Beautiful Soup!
It is pretty warm here in N.J. but with the heat turned down to 60 in the house to save money in this time of recession, I wanted to make a hearty, cheap soup today to start off this month of celebration.
So I am sharing with you today my favorite winter soup recipe. It's very simple to make and it is really cheap, as well as full of vitamens, minerals, protein and it is really yummy.
It makes me celebrate the beginning of December, because I can start making this wonderful soup.
Ginger Carrot Lentil Soup
1 cup washed brown lentils
4 diagonally sliced large carrots
4 large cloves of fresh garlic, coarsely chopped
1 medium yellow onion coarsely chopped
1 one inch knob of fresh ginger coarsely chopped
1 chicken or vegetable bouillon cube
Directions
Wash lentils and cover with 1-2 quarts of cold water in a large soup kettle
Add all other ingredients
Cover and simmer until until done, about 1 hour. Cook longer for a richer flavor and thicker soup.
Pennies per bowl.
Serve with steamed brown rice, quinoa, millet or another whole grain for a whole protein, low bad fat, high energy and really cheap meal.
